Tom Sellers
Hailing from Nottingham, Tom Sellers is a two-Michelin-starred chef who opened his first restaurant, Restaurant Story, at 26. At launch, Tom's unique approach won significant critical acclaim, and the ten-table Bermondsey restaurant was awarded a Michelin Star just five months after opening, with a second following in 2021. Restaurant Story is known for Tom's signature dishes, including 'Bread and dripping', an edible candle made from beef tallow that melts to be eaten with bread, and Tom's unique ability to break convention and merge fine dining with forward thinking.
Tom learned his craft from some of the world's most influential Chefs, spending time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.
In 2019, Tom founded HiStory Hospitality. Tom's vision extends far beyond exceptional food; it's about creating restaurants and dining experiences that foster community, celebrate creativity, and deliver unforgettable experiences. Shortly after, Once Upon A Time launched in 2020 – the group's event catering arm, which continues to work closely with numerous leading brands and partners.
In March 2023, HiStory Hospitality opened Story Cellar, a Parisian-inspired rotisserie and wine bar in Neal's Yard, Seven Dials, bringing relaxed yet refined dining to the heart of Covent Garden. That same year, Tom also partnered with 1 Hotel Mayfair to launch Dovetale; while no longer part of the HiStory Hospitality portfolio, the restaurant remains an important chapter in the journey and reflects a continued ambition to collaborate on world-class hospitality projects.
2026 marked another exciting milestone for the business, with the opening of MOR in partnership with the Carbis Bay Estate in Cornwall, and The Penn at Stoke Park - further expanding the group's collection of distinctive hospitality destinations.
Tom Anglesea, Group Executive Chef, HiStory Hospitality
With a career spanning London, New York, and Sydney, Tom Anglesea has worked in some of the world’s most renowned kitchens, including Per Se, Rockpool, Spice Temple, The Red Lion, Chiltern Firehouse, and The Laughing Heart. Combining classical European technique with a passion for Asian flavours, he has developed a distinctive style that is both refined and ingredient-driven.
Tom helped secure a Michelin star at The Red Lion before leading the celebrated kitchen at The Laughing Heart. In 2023, he launched Dovetale at 1 Hotel Mayfair as Executive Head Chef, further cementing his reputation as one of the UK's most respected culinary leaders.
Today, as Group Executive Chef of HiStory Hospitality, Tom oversees and supports the culinary direction of MOR, helping to create exceptional dining experiences rooted in seasonality, provenance, and innovation.
